I would be really interested to hear if there are any Universities or colleges in the UK that are currently using CRM products?

What functionality fo the CRM systems are the listed universities using?

Edith Cowan University (Perth, Australia)

offers a range of units, but not directly related to CRM, such as "professionalism and ethics" coveres in detail CRM, from planning, implmentation, ethical and legal issues, change management etc. I have yet to find others in Western Australia that offer a focused set of unit"s" around CRM/ERP space.

I teach CRM at MBA level at Macquarie Graduate School of Management in Sydney, Australia. It's a very popular option in which I take a business strategy view of CRM, rather than technology.
